Another Improvised Recipe ;->

         [actually, two  ;-p]
      Tuesday night I wanted to cook up some of the Pork Chops from the huge tray of them Brian had bought. He had already cooked some of them up during the weekend. And I must say that he did an amazing job of them! They were so-o-o good!  According to him, he "battered them up in some flour, salt, pepper and a lot of Parmesan cheese, dunked them in egg, then fried them up half way in oil on the stove. When they were just starting to turn blackish from the oil, I transferred them to a tray and nuked them (microwaved) the rest of the way". They came out, light brown colored, extremely moist, and OH SO TASTY!!!!  He WILL BE requested to make these again, probably often!

     So I didn't want to also fry them. But wasn't sure how I wanted to cook them, so decided to improvise.
      ~ Four small sized onions. Chopped up very fine. And then sauteed in 1/2 cup butter.
      ~ When the onions are most of the way sauteed (starting to turn clear), sprinkle heavily with both salt and pepper.

     ~ Mix the pans contents together thourally.
     ~ Add 26 ounces (a large can) of Cream of Chicken soup. Mix that in.
     ~ Dump on about a third of a 14 ounce box of instant rice. (otherwise known as, 'what was left in the box' o;-p). Make sure everything now in the pan is mixed together good!
     ~ Spray a baking pan (I used a 15 x 12(?) ) good with pan coating spray.
     ~ Turn your oven on to 350.
     ~ Spread the soup/rice/etc. mixture evenly in the bottom of the pan.
     ~ Drain a 29 ounce can of sliced stewed tomatoes, then cut the slices up into little chunks and spread them around on top of the rice mixture. 
     ~ Microwave some frozen packaged corn to the point that its' easy to separate the kernels, then spread the kernels around on top of the chopped stewed tomatoes. How much corn? I used about 3/4ths of the quart sized baggie that was in our freezer.
    ~ Lay the thicker cut pork chops out on top of everything - two across, four down.
    ~ Heavily sprinkle the top of the pork chops with garlic powder.
    ~ Cover the pan with foil, making sure to seal it around the edges, and place into your oven. Bake for about an hour. If at that point you ride along with your husband to take a son whom is at work his wallet, which he had left in the van the day before while driving that, turn your oven down to 200 before leaving. (Hey, I KNOW that things like that happen to most of us - on too regular of a basis!!!)
    ~ Remove from oven. Scoop onto plates. Add a salad if you'd like to. Enjoy!!!  We sure did!!!

    No, I don't have a picture of it to show you. Thought of that detail when we were half way through eating it .....   aw well....
